Poached Skate Wings in a Piquant Tomato Sauce


This recipe is one of my all time favourite chefs, Rick Stein . It is called Poached Skate Wings in a Piquant Tomato Sauce.

Ingredients

For Poaching

  • 2 Skate wings, approximately 500gms
  • 2 Teaspoons salt
  • Water approximately 1 litre


For the Sauce

  • 4 – 6 tbsp Olive oil
  • 2 Garlic cloves finely chopped
  • 1 dried red Chilli finely chopped
  • 6 fresh Bay leaves
  • 2 tbsp finely chopped Parsley
  • 8-10 plum Tomatoes with the sauce or 2 canned Tomatoes
  • 1 tsp Salt
  • 4 tbsp Raisins
  • 5 tbsp Red Wine Vinegar

How to cook

To poach the skate wings

  • Heat water in a large saucepan
  • Add the wings and the salt
  • Poach till the fish is cooked

To make the sauce

  • Heat the oil in a large saucepan
  • Add the garlic, red chilli, bay leaves and fry for a minute or two, careful not to burn the garlic
  • Then add the parsley
  • Add the plum tomatoes along with the sauce from the tomatoes and stir
  • Add the salt
  • Add the raisins
  • Mix all together and simmer on low heat till the plum tomatoes have disintegrated and forms a sauce, approximately 15 minutes
  • Then add the red wine vinegar and stir, mixing all the ingredients well
  • Lastly taste for salt


How to serve

Remove the skin off the fish once it is cool. On a large plate, pour some of the sauce with a large serving spoon to cover the plate. Then place pieces of the fish on the plate and then cover the fish with some more sauce. This dish is best served cold, enjoy.
