This recipe is one of my all time favourite chefs, Rick Stein . It is called Poached Skate Wings in a Piquant Tomato Sauce.
- 2 Skate wings, approximately 500gms
- 2 Teaspoons salt
- Water approximately 1 litre
For the Sauce
- 4 – 6 tbsp Olive oil
- 2 Garlic cloves finely chopped
- 1 dried red Chilli finely chopped
- 6 fresh Bay leaves
- 2 tbsp finely chopped Parsley
- 8-10 plum Tomatoes with the sauce or 2 canned Tomatoes
- 1 tsp Salt
- 4 tbsp Raisins
- 5 tbsp Red Wine Vinegar
How to cook
To poach the skate wings
- Heat water in a large saucepan
- Add the wings and the salt
- Poach till the fish is cooked
To make the sauce
- Heat the oil in a large saucepan
- Add the garlic, red chilli, bay leaves and fry for a minute or two, careful not to burn the garlic
- Then add the parsley
- Add the plum tomatoes along with the sauce from the tomatoes and stir
- Add the salt
- Add the raisins
- Mix all together and simmer on low heat till the plum tomatoes have disintegrated and forms a sauce, approximately 15 minutes
- Then add the red wine vinegar and stir, mixing all the ingredients well
- Lastly taste for salt
How to serve
Remove the skin off the fish once it is cool. On a large plate, pour some of the sauce with a large serving spoon to cover the plate. Then place pieces of the fish on the plate and then cover the fish with some more sauce. This dish is best served cold, enjoy.

Procedure to Make Chocolate Pudding
Now that you have all these ingredients ready, let’s get started. Take 1½ cup of the milk, keeping ½ a cup aside, and pour this into a stove. Now keep it to heat up on a low flame. You do not have to boil it out, just heat it till you see it starting to bubble a little. Now put the sugar, cornstarch, salt, cocoa, and the ½ cup of milk into a bowl, and stir this mixture properly. Now pour this mixture into the hot milk that you heated earlier. As you are pouring this mixture into the mix, heat the final mixture on a medium flame. Once it boils, pour it into a bowl and keep it away to cool, after adding the vanilla essence. If you want to make the pudding a tad bit richer, you can add an egg and some butter to it. That’s it. Simple isn’t it?
You can be pretty sure that you will have everyone at home asking for more. Ingredients for the Sauce
For making the sauce you will need ¾ cup of sugar, 1 cup of water, 1 tablespoon of cornstarch, 1 tablespoon butter, 2 teaspoons of rum flavoring, and ½ a teaspoon of lemon juice.
Ingredients for the Pudding
For the main pudding, you will have to get a hold of 3 cups of small pieces of bread, ½ a cup of raisins, 2 cups of milk, ¼ cup butter, a third cup of brown sugar, 3 eggs, 2 teaspoons of cinnamon, 1 teaspoon of vanilla extract, and ¼ teaspoon of ground nutmeg.
Method to Make the Pudding & Sauce
Now that you have all these ingredients in place, let’s get started. First we will have a look at how to make the sauce. It is pretty simple. Take all the sauce ingredients, except the butter and the lemon juice, boil all of them for around 5 minutes. Now take the butter and lemon juice and add it to this boiled mixture. Keep this final mixture aside for sometime. Now we get to the pudding part. Heat the milk in a saucepan. Once it is hot, add the butter to it and stir continuously, till all the butter has mixed with it and melted. Keep it aside for a moment. Now take the nutmeg, sugar, eggs, cinnamon, and vanilla extract, put all of this into a mixer and let it mix well. Now take the milk and add it to this mixture. After this, take the bread and place it in a greased casserole, and sprinkle the raisins on top of it. Now take this and bake it in your oven for little less than an hour, at 350 degrees F. Once this is set and done, take the sauce and pour it over this bread pudding. Yummmm!!!

It is just sinful, and one sin that we all want to commit. Now for all of you who already want a bite right now, don’t fret. Here,
You will need 3 eggs, 2 cups of flour, 1 cup of softened butter, 1 cup sugar, ¼ cup of milk, 2 tablespoons of cocoa powder, and 125 grams of chocolate.
Cake Preparation Method
First you need to preheat your oven to 180 degrees centigrade or 350 degrees fahrenheit. Get a hold of 2 cake tins which are around 7 inch in diameter and grease them. Boil some water in a pan, and set a bowl with the chocolate in it on this pan, so as to melt the chocolate. Take the butter, sugar and eggs and beat all of it well together. Now add the melted chocolate to this mixture and beat this well again. Now mix the flour and cocoa powder well, sift mix this with your previous mixture. Pour this final mixture into the 2 cake tins and put them in the oven. Let this bake for around 40 to 45 minutes. After that, take out the tins and check if the mixture has risen well. If not, bake it for around 5 to 10 minutes more, at which time it should be done properly.
For the icing you will need 100 grams of butter, 1½ cup of icing sugar, 1 tablespoon of cocoa powder, and just ½ a teaspoon of vanilla essence.
Icing Preparation Method
Now you just need to mix all these ingredients together and beat it well. You will get a light brown colored chocolate cream. As simple as that.
Now take your 2 cakes, and put this icing in between them, to make it like a sandwich. You can put some icing on top of the cake too, or you can even sprinkle the top with some cocoa powder or castor sugar.
